Father and son Albert and Michel Roux Jr are working together for the first time in 19 years in a new collaboration with The Langham, London. This new partnership brings the Roux’s legendary culinary expertise and creativity to the newly re-named Roux at The Landau, their second West End address.
With its own dedicated entrance on Portland Place opposite BBC Broadcasting House, Roux at The Landau is the stunning David Collins designed signature restaurant at Langham Hotels’ flagship property - The Langham, London.
Roux protégé Chris King has been chosen as Chef de Cuisine. He has worked at Le Gavroche over the past five years. He completed his apprenticeship there and was given the opportunity to cook at Thomas Keller’s Per Se in New York, before returning to Le Gavroche and then Roux at Parliament Square as Sous Chef.
The front of house team will continue to be headed up by industry veterans Franco Becci, Restaurant Manager, and Zach Saghir, Head Sommelier, who have been with the restaurant since its opening three years ago
Michel Roux Jr says of the new Chef: “Chris King is a rising star, and his menus reflect the Roux trademark style of classically-constructed French dishes, blended with today’s tastes for lighter choices. He has a modern approach to combining ingredients, and a contemporary style of presentation.” Some classic British dishes, which are customer favourites, will also feature on the menu.
Katie Benson, Regional Vice President for Langham Hotels and Managing Director of The Langham, London adds: “This is a true partnership, bringing together the formidable talents of Albert and Michel Roux Jr. With the Roux’s new talent of Chris King, we can build on the restaurant’s acknowledged standards of elegance and seamless service with exceptional new food.”
Chris King’s team will also be creating the food for Postillion, the discreet and enchanting private dining room, which is available for dining for up to 18 persons.
The wine list at Roux at The Landau will be enhanced with the addition of some selected wines hand-picked by legendary Le Gavroche former General Manager Silvano Giraldin.
Artesian, the glamorous bar at The Langham and the West End’s chic social hub, is perfect for a drink before eating at Roux at The Landau. With a multi-award winning mixologist Alex Kratena conjuring up innovative and classic cocktails, along side London’s largest collection of rums and an extensive Champagne list.
About Michel Roux Jr
Michel Roux Jr was born in 1960 in Pembury, Kent, where his father Albert Roux was working as a private chef for the Cazalet family. His earliest food memories are the smells of the Fairlawne kitchen – pastry, sugar caramelising, stews – where he played under the table while his father and mother Monique prepared the meals.
After deciding to follow in his father’s footsteps, he left school at 16 for the first of several exacting apprenticeships at Maître Patissier, Hellegouarche in Paris from 1976 to 1979. He was then Commis de Cuisine at Alain Chapel’s signature restaurant at Mionay near Lyon, Michel’s biggest influence. His military service was spent in the kitchens at the Elysée Palace at the time of Presidents Giscard d’Estaing and François Mitterrand. He also spent time at Boucherie Lamartine and Charcuterie Mothu in Paris, and the Gavers Restaurant in London.
After a stint at the Mandarin Hotel in Hong Kong he returned to London and worked at La Tante Claire before joining the family business. He took over running Le Gavroche in 1991, gradually changing the style of cooking to his own – classic French with a lighter, modern twist.
He opened Roux at Parliament Square in May 2010 with Restaurant Associates, part of the Compass Group UK and Ireland.
Michel is a keen fisherman and an avid Man U supporter. He enjoys classic cars and is a veteran of sixteen marathons (his best time is 3 hours 13 minutes). He lives in London with his wife Giselle and daughter Emily.
